Hypothetically, if I had unlimited money and didn't care for repairs, I'd pick the ETK K-Series trackday. If money came into play however, I'd pick the Old Pessima.

First, a theory: The Bruckell Moonhawk's stage 1 engine block has performance comparable to a pre-1971 GM 350 V8. Perhaps it is actually the engine from the 1968-1972 Moonhawk, rather than an aftermarket part. Anyway, I would drive a 1973 Moonhawk Sport with a 3-speed auto and a stage 1 engine block. Short of that, I would go with the LeGran Sport, though I would have to learn to drive stick, because the automatic transmission sucks. Alternatively, I would go for a naturally-aspirated, RWD SBR4 S with DCT.
As far as cars that come in the game, I would gladly own the 96 Pessima LX V6 Sport, as it's the closest thing in the game to a mid/late 90's Nissan Maxima SE or Ford Contour SVT. Mine would be 5-speed, dark green with a tan leather interior. I also definitely have a soft spot for the 88 Pessima, the LeGran, and the Grand Marshal. As far as mods, I'm currently really liking the Ibishu Kashira, as it's a small minivan along the lines of a Mazda MPV or 5 or the first generation Honda Odyssey, and like the 96 Pessima it looks like a nice combination of comfort, practicality, and fun.
Ok I get it, so the Barstow Nightsnake I actually tested it on Hirochi raceway and h$@l was it hard to not leave rubber on the tarmac on EVERY SECOND OF THE ROUND
I’d say the D-series Marauder. Not only is it a very good off-roader, but it drives like heaven on the road too. My favourite default vehicle.
