Not really. By that same standard, if you take the back seats out of a convertible, it has become a pickup truck

and if you cut the top off any other SUV it would be the same, maybe a triple cab pickup but by your logic still a pickup.

...That actually sounds like a really cool idea, especially because you'd essentially end up with an Aussie style ute if you removed as much of the area between the passenger area and trunk then replaced the trunk with a piece of metal welded to the back and it probably wouldn't even kill the chassis rigidity too horribly if it was done on a body on frame car.
