Maybe this is due to excessive drag? Colltris produce drag even if they are "backwards", or "hidden" behind other colltris. A quick way to ameliorate this is to have all the colltris of the fuselage having a lower dragCoef.
As for the controls, for pitch/roll, would it be possible to do up/down left/right arrows or maybe wads? if not, maybe an option to at least fly it with the "steering" stick of the xbox controller?
Pitch and roll are currently set to arrow keys, or whatever the controller has for throttle/brake/steering. The rest of the controls are not that obvious, but it's not hard to fly.
A submarine! Another great concept for really putting the physics engine to use. I can only imagine what other ideas you have.
