I had the idea of a huge map with roads starting in germany and leading to italy over the alps. I am curious if anyone else appreciate the idea or even have the muse to create a mod :)

The map should cover roundabout 1000km of distance, but at least 500km.
There could be three sections or bioms of the map:

Starting from southern germany maybe in the black forest with typical regional vegetations of a mythical ancient forest.
Then you got the option to either cruse through the Gothard tunel in switzerland or the brennero passage in austria with curvy roads and sublime views.
Ending somewhere nothern italy with mediterranean geography.

Since romantisism in europe people felt the desire to travel over the alps in to warmer regions for tourism, just for the sake of the roads or for transporting goods from southern europe.

The map would be great for roadtrips, trucking, endurance races or bus travelling.

Sounds like a nice idea and all, but there are several reasons why BeamNG's default maps are as small as they are:
    1. Terrain objects are limited to a resolution of 4096x4096. Some mod maps get around this limit by stretching out each terrain polygon to be larger, but you lose a lot of resolution that way (something that would be immediately noticeable on mountainous terrain).
    2. Floating point errors create visual shaking of the camera and can cause z-fighting if the player gets too far from the level's center-point. This starts incrementally, but it starts to get noticeable at around 8km from the center.
    3. Maps with a large number of objects tend to be more demanding for performance and development, and you'd certainly need a lot of objects to fill a map that's orders of magnitude larger than any official one.
From your description, it sounds like you might like DoullPepper's Altitude map. It doesn't cover the kind of distance or long-haul infrastructure that you are describing, but it does have a pleasant, provincial Alpine atmosphere. Assuming it still works, ofc. It's a pretty old mod.

Thank you for the extend of your answer. Do you know if there is any workaround or if the devs intend to make bigger maps possible?
I guess the limitting factors are low-end-pc or the amount of work needed to fill the map.

To cover distance is one thing vehicules are made for and i really enjoy it in real life. Just an endless roads and some music on the radio :)

I'm sure that the devs are looking into ways to allow for larger maps. But it's been years at this point since we've seen a development roadmap, so we have no idea how soon bigger maps might be coming. As for temporary workarounds, it's possible to just stretch the content of maps over a larger area, both in terms of terrain polygons and objects. But this, of course, reduces the amount of detail the player can encounter. A partial workaround is to use static mesh objects to add detail back to a low-poly terrain, but this then eats into your performance and development budget. It's all a balancing act.

On the other hand, the floating point errors can't be worked around.

I would like it if beamng added a long 3-way highway in the game even though we have Jhonson Vally but 3 way highway yes

Maybe it's possible to make a map like ssrb (That 100 km long highway) but with at least little details and slight curves. doesn't have to be super pretty but just to get this feeling of long distance travelling. And of course it needs working gas stations in between.
Maybe it could also have several on and off ramps with some kind and teleport station to "connect" the maps. For example your garage is located in Belasco City, you load up your trailer there and literally drive to Utah for some offroading.
