So my request is a little bit weird but stay with me.

Im looking for a good simulator to run a scenario of a 1994 GM Siona and a 2002 Toyota Solara.
and I think BeamNG might be my best option.

The reason is my father recently got in an accident and I want to prove the other driver was at fault to the court as we believe the other car was speeding while my father was already halfway through making his turn.

I want to be able to input simple pathways for the collision and the speed at which each car was going at the time of the collision. As well as have accurate weights for each vehicle.

Is this something this software can help me with? and what should I know before going into this?

What you should know before going into this is:
BeamNG is a very complex game, and to create these two vehicles would require days upon days of work.
The steps to creating a vehicle for BeamNG simplified, are this:
    1. Make your own/borrow a model from someone else
    2. Design the Jbeam for that vehicle
    3. Design the textures and stuff
    4. Get the vehicle working ingame.
Also being that BeamNG's lua system is very complex to the normal person, along with the jbeam
