So, I was trying to edit a .jbeam and I opened it up in notepad (not notepad++). Is there a way to go back to where the .jbeam files didn't open up in notepad?

Right click the file and select "Open with..."

    I don't have that option.

You have to delete the file association.

Right now your system is configured to open any file with the .jbeam extension in Notepad, as instructed (you probably forgot to deselect the option to always open .jbeam files in Notepad the first time you opened one)

You can either remove it from the Default Programs panel or edit the registry.

Do you feel like editing your registry?

    Do you know how to?

EDIT - Anyway, here goes nothing.

Assuming you're using Windows 7/8/10, open REGEDIT (Start -> Run, then type "regedit" without quotes, or left click on your Start button -> Run in Windows 10)

    Navigate to HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\FileExts

Find the key associated to the .jbeam association and either:

    - Explode the key and remove the UserChoice subkey. You'll be prompted to select a new default app the next time you try to open a .jbeam file, and Notepad will be the suggested option.
    - Remove the key entirely to reset the association.

... that doesn't allow to unassociate a file type, as requested by @FluffyOreoCX, only to change the default program for it.
