First time PC builder here just wanting to make sure everything is fine before I go ahead and purchase this wallet drainer.

I'm planning on pairing a i7-7700k with a ASUS GTX 1060 6GB and I was wondering A: Does anybody else here run this or know what settings I'll be able to run at.

B: Is my GPU going to hold back my CPU any noticeable amount or should I go for a 1070 (note that this build is mainly for editing and rendering with the exception of BeamNG and some other games)

The GPU will hold back the CPU, but I use a weaker CPU with a 1070 and it works fine. You will be able to play at good FPS(My aunt's i3 integrated graphics laptop runs at 60fps)

I run similar GPU settings but with an unlocked FPS and I hit 110fps to 140fps depending on the map

Yeah me too. Depending on the map I get around 120/140 with V-sync off.
