FOV really messed up, after one of these recent updates

The FOV / camera angles are out of whack, following one of the recent updates. Firstly, the hood view and external camera are zoomed out way too far, and I cannot reset them; secondly, in the cockpit view, I'm seeing the camera phase through the driver's side A-pillar, and I can only correct it with the 'seat adjustments' and by zooming the FOV in [too far for my liking]. Furthermore, it's different with every car, so no one setting applies to all.

Anyone else experiencing this? (I'll post some images later.)

    Some images would help.

Aside that, Field of View on those camera can be customized and will be saved in your settings. Maybe your settings are messed up or you accidentally saved them like that.
You can press Numpad 9/3 to change Field Of View on the fly (is saved per-vehicle).
Or go to Options > Camera to reset everything.

Never mind: some update must have fixed it. The issue that had been going on was happening regardless of how I set the FOV; it involved the camera phasing through the A-pillar no matter what position the camera was in. Furthermore, it only would occur with the 'Driver' view; the 'Relative' view, set at the same FOV, had no issues.

Not sure what that was about, but it's fine now.

We have not touched anything camera related in any of the recent hotfix.

That was more likely related to a level mod.
Some camera settings depends on the level.
For example there is the 'American Road' level mod that has some camera parameters set way too high, and causes the interior camera to clip early with the vehicle's interior like you described.

Depends entirely on the level mod you are using.
