No, there are actual definitions for what's what. Some of these vary from country to country, but at the end of the day the government/insurer is who decides. My first car was a two-door sedan. Volkswagen could have tried to go all fancy and call it a coupe, but it would still say two-door sedan on my insurance. As for utes vs. pickups, I don't know.
I still that dropping the Econoline was a dumb, dumb move by Ford, I know a guy who is running a heating /AC/NG company, and they've been using Ford vans since his grandfather started the business back in 1959. In the last three years they've gotten two new Transit vans, and both of them have been nothing but trouble, so much so that he's actually put in an order for 3 new Chevy vans.
They must have given you guys in the US some naff transit vans, cause over here they are everywhere, including plenty of older ones. The Ford Transit Custom is the best selling van in the UK, Vauxhal Vivaro in 2nd with the Ford transit being the 3rd most popular. The Ford transit Connect is in 7th. Its not like we lack choice when it comes to vans in the UK either, you have Ford, Vauxhaul, Mercedes, Citroen, Renault, Peugeot, LDV, Nissan, and VW to name a few. All of which sell a range of vans. I know another guy who runs an appliance repair shop who bought a Transit van in 2015, and almost immediately had similar issues as my friend with the Heat/AC company, lack of power, transmission problems, electrical problems, door mechanism problems. He sold it late last year and bought a used 2009 E-350 with a V10. I haven't personally dealt with one yet, however I can say that it is easily one of the ugliest things currently on the road.
Personally I prefer the styling on the model it replaced. It had simple lines that worked well. I would probably go as far as to call it iconic. Simple and totally functional.
We never got that one here, however I will say that it does look slightly more tolerable than the current one.
The one I drove had like 8k on it. AC worked great. Made me feel really tall and high off the road. Nice and floaty.
In Australia, pretty much anything that has a tray or bucket/tub is a ute, regardless of how powerful the engine is, or if it is 4WD or not. Because it uses about as much diesel as a semi truck and is probably just as hard to park.

What many people here seem to think constitutes a ute are extremely impractical sports cars, the only utility use they see is the rare moving of dirtbikes in the back. A ute like this is far more ute-ish, in the fact that it actually does work: Keep in mind that ute stands for utility, not pavement princess.
