I'm looking to mess around with some cars and edit their engine configs live in game without having to restart the game and repack the mod files. Is this still possible? (It used to work before ZIPs were used)

Sorry if this is in the wrong section.

I had feared this. Do people who make cars really have to restart the game every single edit? That seems very laborious...

If you want to make a real car mod it isnt that bad. You just look up a graph of a torque curve from this car and change a few numbers. If you want to change the numbers from an original car try the same. maybe it´s working

You don't have to restart game , just use the unzipped folder under mods folder

You can change files etc without restarting the game. To do that, yoou need to put you mod in documents/beamng.drive/mods/unpacked/modname.zip*/mod files here
*that is a folder, not an actual zip

I had tried this but it didn't seem to show up in game... Can you explain a little further? I've unzipped a car so the structure is C:\Users\USER\Documents\BeamNG.drive\mods\vehicles\coupe\All files here

No. Put them in C:\users\user\documents\BeamNG.drive\vehicles\vehfolderhere\files You may have to create the vehicles folder in the BeamNG.drive folder.
