Can I run it and how well?

I have an Intel Core i7 930 (quad core and OC'able) plus a 2gb Nvidia GTX 760.

I have heard the game is very CPU intensive and am curious how well I can run the game. The i7 930 does support hyperthreading if that has any affect.

 

It should be alright. The i7 930 is an aging chip that is falling behind modern counterparts, but you should be able to get minimum 30FPS at medium-high with that build at 1080p. This is more probable if you do overclock.

Hyperthreading doesn't have a huge impact either way, but from personal experience (i7 2600, 4.3GHz) BeamNG is one of a handful of titles that benefit noticeably from it. I saw about a 30% gain in physics core performance with it on vs. off in BIOS last time I tested.
