This build has a lot of room for upgrade with a 750w PSU. Using DDR 4 memory and the newest gen Skylake architecture, it will be cheaper to upgrade. Want more RAM? Buy another 8GB stick. Easy. Only 250GB of storage? SSDs are not necessary, just get a 1TB HDD for less money. Also, a single RAM stick is not a good idea, single channel DIMM is slower, and if it dies your whole PC is down until you can get a new one. And a 212 Evo is not necessary for a locked CPU. Intel box cooler is good enough for stock clocks if you have decent airflow. I was under the impression that the new Skylake processors did not come with coolers anymore. The OP already has a HDD and wants a SSD for his OS. That's true, he could get 2x4GB. The bandwidth is not an issue as even single-channel bandwidth will never be a bottleneck for gaming, but it might be helpful in the extremely rare case that his RAM stick fails. That said, your build is pretty good and the 970 is a solid card.
It's just the K processors that don't have stock coolers. Ah, ok then. My build should be ~£680 with a 250GB SSD. I could change the PSU, 750W is a bit overkill for a 970 TBH. 600W would be fine.
I have been changing some things around and I think that I would want to get a 600w PSU just to be safe. Is this a good choice?
Yes, it should be fine. CX PSUs are not the best but they're still as good as you'd expect from Corsair.

I already ordered it and as Zorin said, I got an i5-4690K and a GTX 970 4GB for the same price. Also it would be pointless if I bought a CPU that I planned to upgrade, waste of money.
