Dyno, little town scenery, proper crash test environment type of thing, little rock crawling areas, speed trap in the outside area, Change the cylinders around , maybe make a snowy trail or ice rink (a snowy map based on something like wisconsin would also be cool, a big ski jump and a small race circuit with timers etc, I think these would add a lot of testing and variation to the map.
I think some sort of small 4x4/AWD test track would be nice. Including the same type of suspension testing as what @ThatCarGuyDownTheStreet posted, but also steep hills. Perhaps both an asphalt and a dirt version. Would also be great for testing hill descent assist/control (if it'll ever become a feature.) I'd suggest keeping the current tracks how they are (both Sky Curves and the High Speed Loop), but with updated textures and/or detail. It would also be cool to see the map laid-out more in categorized sections as opposed to the random placement that everything is now (suspension and handling area, destruction area, stunts and crawling, etc.). Lastly, this one's obvious but I'd still like to make sure it gets included: At the end of the day, it would still be nice if Gridmap was a great area for testing nearly every aspect of a vehicle without being too complex. (And yes, even the infinite outside area is great for testing top speed.)

some areas for more different vehicles, we have an offroad space and a track etc but what about a small drift track a small drag track etc added to the grid map
Wow this thread has spawned a multiple of great suggestions in no time ! So my proposition is to fork the grid map into two grid maps (just duplicate it) and take one into one direction and the other into the other one A mass of possibilities !
We understand that everything we would like to see in the Gridmap would be pretty difficult to run by many users PCs. Here's my solution, if it is possible to leave current Gridmap as standard, but add newer Gridmap with many added features as Advanced Gripdmap option, so the user won't have any problem playing in this map, but if they want more features they won't be limited.
Maybe a derby arena with pitfalls and taller ramps for jumping cars off of. Also a mock up road course with straights, curves, hills, intersections, a turning circle and maybe like some people mentioned earlier a short highway section extending outside the walls. This could also give the bus routes some purpose since the stops could now be on the road course.
Rollover material, something to reliably cause medium to high speed multiple rollovers and an high grip surface to really grip on the rolling car. Like usually seen in gravel traps and grass in real racing. Example of a perfectly executed barrel roll here:
