The classic Mini Cooper. Who doesn't want a British hatchback to completely obliterate or to rally around the dirt roads?

How about a 2004 Ford Escape? It came with a lot of options like FWD or AWD and there were a lot of "editions" like Escape, Escape XL, Escape XLT, or Escape Limited. It is 173" Length by 70" Width by 69" Height. It weighs around 3052-3364 pounds. It had a 127-hp 2.0 I4, or a 201-hp 3.0 V6, with a 5-speed manual or Automatic 4 Speed (I think), technically there is room for a turbo in it but you can really put whatever else to make it more fun to drive too, can have ABS, a transfer case to go from AWD to FWD, could have a roof rack, sun roof, two-tone paint, plastic or painted bumpers, running boards, steel or alloy 15-16" wheels (or oversized 20"), front and rear license plate, a tow hook, and a nice looking bug shield, and even a bull bar made for it. It also had a very simple interior which could make it easier to design. I personally have one so I could get you every single angle possible if you need with IRL photos. I even came up with a name for it, and called it the Marter Omnia. (Yes I know it means Marter All but we have The Ferrari La Ferrari so) Let me know what you think if you like the concept.

Maybe an Opel Senator B? Based, let's say, on the Grand Marshal platform. Or better yet, some boxy, communist-era car like the FSO Polonez or the Fiat 125? Take those into consideration when making a new mod. Cheers!
