It should be in "My Documents/BeamNG.drive/"

Yes, and that is also the reason of why you get the error in the first place. Is there anything special about that directory? Non-English username? On a network drive? Not on C: ?

For some reason, the game cannot write to there :/

There is the possibility that it is on an H: drive. Do you know how to change the directory so that it is in my C: drive? My H: drive is a network drive.

Apparently, the game cannot write to your user's folder. I am currently improving the user folder behavior and i will add some fallbacks so it will try to save it in the local directory as last resort. That should fix your problems :)
